PASSION FRUIT POUND CAKE (Maracuyá in Spanish)

This is a truly delicious cake. I grew up in Cartagena, Colombia with my Grandma, she used to have a huge house with a lot of trees, one of my favorite: Passion Fruit (Maracuya in Spanish). We had fresh passion fruit juice for lunch, Yum!. Passion fruit is now very popular in the north cost of Colombia, and it is a main ingredient to prepare the most exotic dishes and sauces. I love the sweet and sour flavor this fruit add to everything.


I decided to play with this amazing flavor, the aroma and the beautiful color this exotic fruit add to the food. I went to have it on my Grandma's backyard for free to the local Farmer's Market for $3.99 ea. ouch! But it worth every penny! This is a truly delicious cake; it's fresh, natural, light, fluffy and aromatic. There's is no way you regret it!


Let's get started!


Difficulty: If I can do it, you can do it!

Prep Time: 15 min - Cook Time: 35-40 min

  • 1 Stick of Butter - I always use salted. Found a better flavor.

  • 1 Cup of sugar

  • 2 Eggs

  • 1 Tps Vanilla

  • 6 Tps of Passion - most of the seeds removed

  • Zest of one orange

  • 1/2 Cup of Buttermilk

  • 1/2 Tsp Baking Powder

  • 1/4 Tsp Baking Soda

  • 1/4 Tsp Salt

Preheat the oven to 350F and grease the loaf pan.

In a bowl sift together the flour, baking powder, baking soda and salt.

In a standard mixer, beat the butter and sugar until the mixture is fluffy. Add the eggs one at the time, beat one more minute.

Add the vanilla, the passion fruit and the orange zest.

On a low speed, add the dry ingredients (flour, baking powder and baking soda w the salt) 1/2 of the mixture followed by half of the buttermilk and repeat.

Put the mixture in a previous greased loaf pan. Bake for 35-40 mins

Let it cool down! In a meanwhile let's work on the sauce:

Take 3 Tsp of Passion Fruit pulp with the seeds, add some confectioner sugar and a tiny bit of boiling water. Wisk until the mixture is smooth. Poor on the top of your loaf. YUM!

I brought this to a Colombian party. It disappeared!
