Easy Shaped Cookies. Sugar Almond Cookies

I thought making cookies was a piece of cake. I had this corporate event, they want cookies, but not any cookies! Christmas cookies. Wait! It is Summer...obviously the client is always right and I wanted to impress. I try Lemon cookies, sugar and vanilla cookies trying textures and flavors with my kids. I have to admit it was fun and they had a tremendus sugar rush, but at the end the texture didn't help with the shape. Miraculously I found this in my recipe book: Sugar - Almond Cookies. Believe me, the best texture ever to make cookie shapes, very easy, very soft and the almond give a special flavor and aroma.

Let's do it!

Preparation time: 15 Min plus 1 hr in the fridge.

Cooking time: 10 Min

Difficulty: If I can do it, so you can!

Ingredients:

  • 2 1/2 all purpose flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 11 teaspoon of butter (1 - 1/4 Sticks)

  • 1 cup of sugar

  • 1 Egg

  • 1/2 teaspoon vanilla

  • 1 teaspoon almond extract

Combine the flour, salt and baking powder. Set aside.

In a separate bowl using a stand mixer beat together the butter and sugar until turn fluffy (about 3 min). Scrape the bowl and mix for 1 more minute.

Crack the egg, add the vanilla and almond extract and whisk with a fork. With the mixer in low add the egg gradually.

With the mixer in low, using a large spoon, add the flour gradually until the mixture form a slightly crumbly dough. Gather the dough together using a plastic wrap and form into a ball. Refrigerate it for 1 hour.

Remove the chilled dough from fridge and allow to sit at room temperature for about 5 min before rolling. Preheat the oven to 350F.

Lightly flour the surface and the rolling pin. Very lightly roll out the dough to about 1/8 inch thick. Press the dough with a cookie cutter. Place the cookies to a baking sheet about 1-1/2 apart. Place the baking sheet with the uncooked cookies in the fridge for about 10 min. this will help prevent spreading and over browning.

Once the cookies are done, place baking sheet on wire track and allow cookies to cool very well before frosting.
